Thibaut Gamba, the new chef at Logis de la Cadène

Stéphanie de Boüard-Rivoal, CEO of Angelus, has chosen Chef Thibaut Gamba to take over the kitchens at Logis de la Cadène in Saint-Émilion.

This appointment, effective 18 September, follows the recent departure of Alexandre Baumard who, after 10 years of fruitful collaboration, has decided to develop personal projects.

Thibaut Gamba, 37, had already enjoyed a successful career that took him to highly prestigious establishments in France and abroad before taking the helm 6 years ago at La Table du Clarance, the Michelin-starred restaurant in Lille, where his talent and technique won him professional recognition and public acclaim.

Since its reopening in 2013 at the initiative of the de Boüard de Laforest family, owners of Château Angelus for more than two centuries, Logis de la Cadène, a family-run inn founded in 1848 in the heart of the famous medieval village of Saint-Émilion, has become one of the region’s leading
gastronomic and lifestyle venues.
This continued quest for excellence, recognised in particular by the award of a Michelin star, is set to continue with the arrival of Thibaut Gamba. The family has every confidence that he will take the restaurant to even greater heights, especially following the major renovation and extension work that has further enhanced its potential.

Thibaut Gamba will be using his dexterity, exacting standards and passion to write this new chapter in the history of Logis de la Cadène, in which he intends to instil his own distinctive style of cuisine, based on elegance, respect for the product and the pleasure of sharing.
He will have the support of an experienced team, a network of exceptional suppliers and, internally, La Ferme 1544, with its produce used by Angelus to supply its restaurants, in a spirit of responsible farming and short supply chains that immediately appealed to the new chef.
