The chef’s dishes reflect an obsession with produce and seasonality. Plants, and vegetables in particular, play an essential role in his dishes, and everything else seems to revolve around them.

Having worked closely with local producers for many years, he is now embarking on a new adventure: a 9-hectare farm in Saint-Loubès, on the banks of the Dordogne. For this sourcing enthusiast, it’s the realisation of a long-held dream: to supply the kitchens with his own produce, to control the entire production chain and to make the most of produce from the terroir of the Bordeaux region.

La Ferme 1544 thus supplies its kitchens with fresh fruit and vegetables, as well as cereals, mushrooms, honey, meat, eggs, etc. Thanks to the transparency and total control of production, the chef can give free rein to a new approach to cuisine, experiencing and arousing new emotions and initiating a journey so simple and natural that it has become unexpected and surprising.
